Hey, I’m Shannon!

 

The Founder and Owner of Sponge Happy.

 

As a child, I always loved to bake. I was pretty confident with the traditional wooden spoon method however my skill set ended at Butterfly Cakes.

Now, they are incredible and always tasted amazing but I wanted to learn more.

 

In 2019, I decided that I wanted baking to become a serious Hobby in the hope of this becoming my Career. I was adamant that I was going to teach myself all that I needed to know. I refused to have baking lessons as I wanted to receive the self-satisfaction of achieving everything independently.

 

And that’s exactly what happened.

YouTube, Great British Bake Off and Recipes Books have been my best Friends over the years and have tried, tested and practised many different recipes and techniques to get to where I am now.

Apologies to my Family and Friends who have had to constantly taste-test and pretty much live off Cake until I perfected my recipes.

(I say apologies but, you loved it really)
